Carambola Beach Resort and Spa, on St. Croix’s north shore, offers extraordinary buffets.

The resort’s year round Friday night Pirate’s Buffet has become almost as legendary as Blackbeard, among locals who can sniff out a great value. And its fabulous fusion of international and native flavors offers something special for visitors to the island.

Some resorts are content with the standard buffet fare. But Carambola creates an authentic Caribbean experience with a performance of stilt dancing by moko jumbies from St. Croix’s The Guardians of the Culture, led by master moko jumbie Willard John, and festive island music.

The bountiful Pirate’s Buffet includes a carving station of prime rib, peel and eat shrimp and crab claws, fresh fish, barbecued chicken, and local dishes like oxtail stew, stewed mutton and chicken, king fish Creole, macaroni and cheese, Cruzan Stuffing, and johnny cakes, along with a splendid selections of salads, fruit and desserts.
